ANZAC Biscuit Granola

 

This granola is like ANZAC biscuit chunks - and it just so happens that it’s so healthy, it’s not only acceptable, but encouraged, to eat it for brekkie!

All you need is a handful of pantry staple ingredients and less than 5-minutes of hands-on time, to get prepped for a healthy week of breakfasts and/or snacks!

Ingredients:

4 cups rolled oats

2 cups coconut flakes

1/2 cup maple syrup

1/2 cup flour - regular flour, spelt flour or gluten-free flour

1/2 cup nuts of choice (such as pecans/almonds/macadamia nuts), roughly chopped OR 1/2 cup buckwheat groats

4 tablespoons ghee or butter, melted

1/2 teaspoon sea salt

1/2 teaspoon cinnamon

Method:

  1. Preheat oven to 160ºC.

  2. Combine all dry ingredients in a bowl and mix well, then add ghee/butter and maple syrup. Mix until combined.

  3. Prepare a tray with baking paper.

  4. Place the oat mix on the baking tray.

  5. Cook for approximately 30 minutes, or until golden

  6. Tip: You MUST let the granola cool completely before breaking it up or storing it in a glass jar - this way it stays in clusters and you’ll get the delight of having mini ANZAC bikkies in your morning granola!

  7. Serve it with yoghurt of choice, berries and/or dried fruit.
